Learn the Fundamentals of Cooking Course is a practical and involving project, aimed at all those who decide to concentrate on the basics of Italian cuisine in a short-term course. Within this program, all the main topics, which are necessary for the crucial achievements in this field, will be addressed. In particular, you will be taught the following modules:
The basics: cooking stock, soups, purées and soups.
Fresh pasta: pici, potato gnocchi and tagliatelle, flours and proportions
Fresh stuffed pasta: ravioli and tortellini. Shapes and textures
The specials: risottos and bundles of crèpes, types, cooking methods and creations
Cooking techniques: the main preparations of meat-based second courses, stewed cooking, frying, vacuum cooking, low temperature cooking and the various cuts
Fish: processing of the main fish species, fishbone, molluscs and crustaceans, the different types of cooking, cleaning and filleting.
Pastry: the basics, shortcrust pastry, puddings, sponge cake and creams
Decorations and presentations of the dishes will be the final part of Learn the Fundamentals of Cooking
