Erano anni che cercavo una scuola di cucina per imparare tecniche e segreti della cucina e ho scoperto di averla a portata di mano. Appena terminato il corso cuoco in questa splendida accademia dalla vista mozzafiato. Ho deciso di intraprendere questo percorso formativo professionale per fare di una passione un lavoro. E così è stato. Due giorni dopo l’esame finale ero già in prova in una cucina, prova che ho superato grazie agli innumerevoli insegnamenti dello chef Maurizio che fa questo lavoro con passione e professionalità.

Our Educational Path:

Our Professional Pastry Chef Course is suitable for those who approach even for the first time to the wonderful pastry world, from classic preparations, to modern ones.

The Course is divided into two levels.

1° LEVEL

This theory-practice syllabus gives everybody the chance to learn the main basic techniques, from shortcrust pastry, to mounted pastry, from creams to the main spoon desserts, and even salted products, yeast mixtures, and cake preparations.

At the end of the first level of this professional course, there will be explanations of the techniques to decorate cakes and desserts.

No particular qualifications are required to enter the course, except for enthusiasm and the desire to learn a creative and artistic profession. The course is made for those who would like to start working as pastry chef, and to transform their passion into art.

Lessons will take place in the afternoons and evenings, for a duration of 8 weeks, for a total of 68 hours of theoretical and practical lessons and 12 hours of theory to obtain the F.O qualification for food preparation and hygiene (HACCP).

One month, formative internship held in the best selected confectioneries and patisseries.

At the end of the course there will be a final exam.

2° LEVEL

This professional course is suitable for those who have a basic knowledge in this field. It’s an evolution of the first level course, that explains the most important basis necessary to a pastry chef.

Students will become able to prepare shortcrust pastry, sponge cake and biscuits, creams, bavarois and mousse, flaky pastry and choux pastry.

Lessons will be of a higher level if compared to the preceding course.

The aim of this course is to reach an independent management while working, with a particular attention to the knowledge of raw materials, the techniques and practical realization of the mixtures, transformation and preservation of the products.

Students will have the chance to be present and observe directly, they will be helped by the teaching material, with all the practical explanations, and by our teachers’ constant presence.

Lessons will take place in the evenings, for a duration of 9 weeks, and a total of 80 hours of theoretical and practical lessons.

One month, formative internship held in the best selected confectioneries and patisseries.

At the end of the course there will be a final exam.

At The International Chef Academy of Tuscany you can also attend personalized individual courses, with timetables, days and topics of the lessons to be planned together with the teacher.

This type of course is dedicated to all those who, due to their different personal needs, can not attend the courses organized directly by the Academy.

With this solution you can undertake general cooking paths or monothematic paths such as starters, fresh pasta, meat and game or desserts to get to know or deepen the different types of preparation.
